Citrus Tarragon Compound Butter

Yield: 1 lb

Equipment:

  • 1 - Bowl
  • 1 - Whisk
  • 1 - Parchment Paper

Ingredients:

  • 1 lb Butter, room temp
  • Zest from 2 Oranges
  • Juice from 1 Orange
  • 4 tbsp Tarragon, fresh, finely chopped
  • Pinch of Salt

Instructions:

  1. Mix all ingredients together
  2. Place mixture into the center of the parchment, and roll into a 1 inch thick log.
  3. Refrigerate
  4. Slice as needed

Notes:

  • Add plastic wrap around the parchment for better storage.
  • Tarragon has a Licorice flavor to it, from my experience, you either LOVE or HATE licorice, so add or omit accordingly.
  • Tarragon bruises really easily, so use a very sharp knife, and gently slice the tarragon.
  • Zest the oranges first, then juice 1, no need to use 3 oranges.
